Easy Cucumber Salsa

Crunchy, delicious, and soooo fresh, this cucumber salsa is the perfect topping or side dish!

Ingredients

  • 1 seedless english cucumber chopped
  • 1 cup Grape or Cherry Tomatoes halved
  • 1 small shallot chopped
  • ½ jalapeño (optional) finely chopped
  • ½ bunch fresh cilantro chopped
  • 1 lime juiced
  • ½ teaspoon salt
  • Pinch black pepper

Instructions

  1. Chop all the fresh ingredients and add them into a medium bowl.
  2. Squeeze the lime over the bowl, season with salt and pepper, and toss to combine.
  3. Refrigerate the salsa until ready to serve, for up to 2 days.
