Easy Denver Omelet Hash Brown Casserole

Easy Denver Omelet Hash Brown Casserole layers frozen hash browns with ham, cheddar, cherry tomatoes, bell pepper, onion, and garlic, all bound together with a seasoned egg and milk mixture. Baked until the edges are golden brown and the center set, this casserole offers a hearty, savory dish reminiscent of a Denver omelet in a convenient, shareable form.

Ingredients

  • 6 cups hash browns about 18 oz, frozen
  • 16 oz. ham cubed
  • 2 cups cheddar cheese shredded
  • 1 cup cherry tomato halved
  • 1 green bell pepper chopped, medium
  • ½ yellow onion chopped, medium
  • 4 garlic minced, cloves
  • 12 egg large
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper ground

Instructions

    Cup of Yum
  1. Preheat oven to 350 degrees F.
  2. Add the frozen potatoes, ham, cheese, tomatoes, bell pepper, onion, and garlic to a large bowl. Stir to combine. Pour the mixture into a 9x13 baking dish that has been sprayed with cooking spray.
  3. In a large bowl, whisk the eggs with the milk, salt, and pepper (I use the same bowl from step 2).
  4. Pour the egg mixture over the hash brown mixture. Pat everything down with the back of a wooden spoon.
  5. Bake for one hour. The center should be set and the edges should be golden brown.
  6. Let the casserole rest for 10 minutes before slicing and serving.*

Notes

  • Let the casserole rest for 10 minutes after baking to ensure the center fully sets before slicing.
