Easy Denver Omelet Hash Brown Casserole

Easy Denver Omelet Hash Brown Casserole layers frozen hash browns with ham, cheddar, cherry tomatoes, bell pepper, onion, and garlic, all bound together with a seasoned egg and milk mixture. Baked until the edges are golden brown and the center set, this casserole offers a hearty, savory dish reminiscent of a Denver omelet in a convenient, shareable form.

Description

Easy Denver Omelet Hash Brown Casserole combines crisp-tender frozen hash browns with diced ham, shredded cheddar cheese, cherry tomatoes, green bell pepper, chopped onion, and minced garlic. These ingredients are mixed together and spread in a baking dish.

A seasoned mixture of eggs, milk, salt, and black pepper is whisked and poured over the hash brown mixture. The casserole is baked at 350°F for an hour until the egg base is fully set and the edges develop a golden-brown crust, creating a contrast between crispy edges and a creamy interior.

This casserole serves as a filling breakfast, brunch, or comfort food option that can easily feed a crowd. It can be sliced for serving once rested, making it convenient for gatherings or meal prep.

Allowing the casserole to rest for 10 minutes after baking helps the center finish setting for easier slicing and a better texture.

Ingredients

Servings
  • 6 cups hash browns about 18 oz, frozen
  • 16 oz. ham cubed
  • 2 cups cheddar cheese shredded
  • 1 cup cherry tomato halved
  • 1 green bell pepper chopped, medium
  • ½ yellow onion chopped, medium
  • 4 garlic minced, cloves
  • 12 egg large
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper ground

Instructions

  1. Preheat oven to 350 degrees F.
  2. Add the frozen potatoes, ham, cheese, tomatoes, bell pepper, onion, and garlic to a large bowl. Stir to combine. Pour the mixture into a 9x13 baking dish that has been sprayed with cooking spray.
  3. In a large bowl, whisk the eggs with the milk, salt, and pepper (I use the same bowl from step 2).
  4. Pour the egg mixture over the hash brown mixture. Pat everything down with the back of a wooden spoon.
  5. Bake for one hour. The center should be set and the edges should be golden brown.
  6. Let the casserole rest for 10 minutes before slicing and serving.*

Notes

  • Let the casserole rest for 10 minutes after baking to ensure the center fully sets before slicing.
