Easy Egg Salad Recipe

Super easy egg salad recipe! Perfect in a sandwich, on crackers, or all by itself. Toss it together in less than 30 minutes for a quick meal.

Ingredients

  • 12 hard boiled eggs chopped
  • 3 tablespoons Pickles minced, see note
  • ½ cup celery minced, about 2 stalks
  • ⅓ cup mayonnaise
  • ½ cup purple onion minced, about ½ an onion
  • 2 tablespoons water
  • ½ teaspoon hot sauce see note
  • 1 tablespoon Dijon mustard
  • ⅛ teaspoon season salt
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

    Cup of Yum
  1. Gently combine all ingredients EXCEPT water. 
  2. Add the water a little bit at a time until the egg salad is creamy. 
  3. Taste and adjust seasonings. 

Notes

  • You can use sweet or dill pickles, they both compliment the recipe well. 
  • Add as much or as little hot sauce as you prefer, it adds a nice flavor and kick.
