Super easy egg salad recipe! Perfect in a sandwich, on crackers, or all by itself. Toss it together in less than 30 minutes for a quick meal.

Ingredients
- 12 hard boiled eggs chopped
- 3 tablespoons Pickles minced, see note
- ½ cup celery minced, about 2 stalks
- ⅓ cup mayonnaise
- ½ cup purple onion minced, about ½ an onion
- 2 tablespoons water
- ½ teaspoon hot sauce see note
- 1 tablespoon Dijon mustard
- ⅛ teaspoon season salt
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Gently combine all ingredients EXCEPT water.
- Add the water a little bit at a time until the egg salad is creamy.
- Taste and adjust seasonings.

Notes
- You can use sweet or dill pickles, they both compliment the recipe well.
- Add as much or as little hot sauce as you prefer, it adds a nice flavor and kick.
