Easy Fava Bean Dip blends cooked fava beans with garlic, lemon juice, vinegar, and olive oil into a smooth spread. Ingredients
- 2 cups fava bean see notes below on how to cook from dried beans, cooked
- 2 cloves garlic pressed
- 1/8 tsp salt sea salt
- lemon juice of one
- 1/2 tsp white wine vinegar
- 1/4 cup extra virgin olive oil
- walnut garnishes, chopped walnuts, or smoked paprika, or quality olive oil

Instructions
- Place the cooked beans, garlic, salt, lemon juice, and vinegar in the bowl of a food processor. Pulse until well-combined.
- Continue to pulse the machine as you slowly drizzle the olive oil in through the lid opening. Process until smooth.
- Transfer to a serving bowl. Garnish as desired and serve with crusty bread or pita chips.
Notes
- To cook dried fava beans, boil then simmer covered until tender, about 40-45 minutes; remove skins if not already peeled for smoother dip.
- Store the dip in an airtight container refrigerated for 3-4 days; freeze in a sealed container for 2-3 months, thaw before reheating gently.
