Ingredients
- 1 cup dried fruits and nuts raisins, apricots, prunes, cherries, figs, walnuts
- 2 eggs beaten
- ¼ c butter melted
- 6 tablespoon flour
- 4 tablespoon brown sugar
- 1 teaspoon baking powder
- 1 orange zested
- 2 teaspoon powdered sugar for sprinkling
Instructions
- Preheat the oven to 355 F.
- In a large bowl beat the eggs and add melted butter and orange zest.
- Chop up apricots, prunes and figs into 4-6 pieces each.
- Add dried fruits and nuts to a bowl with eggs. Also add flour, sugar and baking powder. Mix well.
- Spoon the batter into a covered with parchment paper loaf pan, spreading evenly. Bake for 45 min.
- If the top of the cake starts to brown too fast, cover it with a parchment paper.
- Cool in the pan for 15 minutes.
- Remove from loaf pan and sprinkle with powdered sugar.
