Easy Fruit Loaf

Ingredients

  • 1 cup dried fruits and nuts raisins, apricots, prunes, cherries, figs, walnuts
  • 2 eggs beaten
  • ¼ c butter melted
  • 6 tablespoon flour
  • 4 tablespoon brown sugar
  • 1 teaspoon baking powder
  • 1 orange zested
  • 2 teaspoon powdered sugar for sprinkling

Instructions

  1. Preheat the oven to 355 F.
  2. In a large bowl beat the eggs and add melted butter and orange zest.
  3. Chop up apricots, prunes and figs into 4-6 pieces each.
  4. Add dried fruits and nuts to a bowl with eggs. Also add flour, sugar and baking powder. Mix well.
  5. Spoon the batter into a covered with parchment paper loaf pan, spreading evenly. Bake for 45 min.
  6. If the top of the cake starts to brown too fast, cover it with a parchment paper.
  7. Cool in the pan for 15 minutes.
  8. Remove from loaf pan and sprinkle with powdered sugar.
