Easy Fruit Pizza Recipe

Enjoy a slice of beautifully decorated fruit pizza made so easily with a soft sugar cookie crust and a sweet and creamy cream cheese frosting. Mix and match any favorite fruit to make a visually appealing easy dessert every time!

Ingredients

  • 16.5 ounces Sugar Cookie Dough
  • 8 ounces cream cheese
  • ⅓ cup sugar
  • ½ teaspoon vanilla extract
  • 8 strawberries fresh sliced
  • ¾ cup blueberries fresh

Instructions

  1. Preheat oven to 350° F.
  2. Break off pieces the refrigerated sugar cookie dough over a 12 inch round pan like a pizza pan. (you can also use a rectangle pan if desired).
  3. Press the cookie dough onto the pan pressing together to make the crust. Leave approximately 1 inch around the edge of the pan to allow for spreading.
  4. Bake the cookie dough for 12-15 minutes or until the cookie crust is golden brown.
  5. Allow the cookie crust to cool completely.
  6. In a medium bowl, add the softened cream cheese and beat on medium with an electric mixer until smooth.
  7. Add the sugar and vanilla extract and beat of medium-low speed until combined.
  8. Spread the cream cheese mixture over the cooled cookie crust.
  9. Decorate with the fresh fruit. Arrange in lines, circles around the perimeter

Notes

  • Use other fresh fruit, like thinly sliced kiwi or mango, peaches, halved red or green grapes, etc.
  • Use a rectangle baking sheet instead.
  • Use powdered sugar instead of white sugar in the cream cheese mixture.
  • Make a small batch homemade sugar cookie recipe if you'd like:½ cup butter, softened¾ cup white sugar1 large egg, room temperature1 ½ cups all-purpose flour or gluten free one-to-one flour¼ teaspoon baking powder¼ teaspoon salt½ teaspoon vanilla extract
  • Cream the butter and sugar together until fluffy, about 3 minutes. Add the egg and vanilla extract and blend in. Add in the flour, baking powder, and salt and stir until combined. Chill in the refrigerator for 1 hour then spread onto pan and bake 10-12 minutes until golden brown.
