Easy Fruit Salad

This fresh fruit salad is light, fresh, and easy to make. It takes juicy, delicious fruit and combines it with a sweet citrus dressing.

Ingredients

Fruit Salad
  • 2 cups chopped pineapple
  • 2 cups sliced strawberries
  • 2 cups peeled and sliced kiwis
  • 2 cups halved red seedless grapes
  • 2 cups drained canned mandarin oranges
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
Dressing
  • ⅔ cup orange juice
  • 2 tablespoons lemon juice
  • ¼ cup honey
  • 1 teaspoon cornstarch

Instructions

  1. Add orange juice, lemon juice, and honey to a saucepan.
  2. Bring it to a boil and simmer for about 5 minutes.
  3. Make a cornstarch slurry with the cornstarch and 1 teaspoon of cold water whisked together. Pour the slurry into the dressing and whisk. Remove from the heat and set aside to cool.
  4. Add all of the fruits to a large mixing bowl and pour the dressing over.
  5. Stir to combine. Serve and enjoy!
