Easy Green Curry Paste

Ingredients
- ½ cup basil chopped, fresh
- ½ cup cilantro chopped, fresh
- 1 lemongrass thinly sliced (or 3 tbl. Lemongrass paste, 1 stalk
- 2 jalapeños seeded and chopped
- 1 shallot chopped, medium
- 5 cloves garlic minced
- 1 tablespoon ginger grated, fresh
- ½ teaspoon cumin ground
- ½ teaspoon ground coriander
- 1 tablespoon coconut aminos or low-sodium soy sauce
- lime zest of 1
- 2 teaspoons lime juice fresh
- 4 tablespoons coconut milk full-fat, canned, quantity up to 6
Instructions
- Add all ingredients except for the coconut milk to a blender or food processor. Pulse until everything is finely chopped.
- Add the coconut milk a couple of tablespoons at a time and continue blending until a paste is achieved.
- Alternatively, you can use a mortar and pestle to grind everything together into a paste

- *You can replace the aminos/soy sauce with fish sauce
