Ingredients
- 4 bone-in pork chops cut ½" thick (about 1 ⅓ to 1 ½ lbs. total weight)
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Remove pork chops from refrigerator 30 minutes prior to grilling. Place chops on a small rimmed pan or plate and sprinkle fairly generously with kosher salt and freshly ground black pepper on both sides. Be sure to also sprinkle salt and pepper on the bones.
- Heat grill to high, about 450°F. Clean grates well, and then close grill lid for a minute to build heat back up.
- Place pork chops on hot grates, close grill lid, and cook for 2 minutes without peeking. With a tongs, flip pork chops over and cook second side for 1 ½ to 2 minutes longer, until a medium internal temperature of 145° F is reached. Use an instant read thermometer for a quick temperature reading. Remove pork chops from grill and let rest for 3 minutes to seal in juices and natural flavor.
- Serve with mustard seeds for a tangy contrast to the grilled pork. Fresh greens with dressing also pair well with this meal.
