Easy Hawaiian Pork Chops (Slow Cooker)

Ingredients
- 4-6 pork chops bone or boneless, ¾-1 inch thick
- 1 cup soy sauce
- ⅔ cups ketchup or chili sauce
- ¾ cup brown sugar packed
- 1 can (14 oz) pineapple, rings or crushed, not drained
- 2 tblsp garlic minced
- 1 tblsp ginger minced
- ¼ cup apple cider vinegar
- 1 tblsp dried crushed red pepper flakes optional, more or less to taste
- 1 medium onion sliced
- 1 large bell pepper green, yellow or red, cored, sliced
- cooking spray
- 3 tblsp cornstarch or potato starch
- ¼ cup water
Instructions
- Lightly spray your slow cooker with cooking spray. Sprinkle your onions across the bottom of your slow cooker.
- In a medium sized bowl combine the soy sauce, brown sugar, chili sauce or ketchup, can of pineapple juice without pineapple, vinegar, crushed red pepper flakes, minced garlic and minced ginger.
- Before cooking, season the pork chops generously with salt and pepper to taste. If you are cooking more than four pork chops, or your pork chops will not fit across the bottom of your slow cooker place the first or only layer of pork across the bottom of your slow cooker, on top of the onions.
- If you have more than one layer of pork chops pour half of the soy mixture over top of the first layer of pork. Then place your remaining pork chops on top. Sprinkle with peppers and pour remaining soy mixture on top. If your pork chops fit across the bottom of your slow cooker and you only have one layer of pork chops sprinkle peppers on top of your pork and pour the soy mixture all over the top of the peppers.
- Cover and cook on high for 3-4 hours or on low for 6 hours.
- Turn your slow cooker up to high. Using a spatula remove pork chops from your slow cooker and set aside. In a coffee sized cup stir starch and water until starch is totally dissolved. Add to the soy sauce mixture. and stir until combined.
- Once gravy or sauce has thickened return pork to slow cooker, add pineapple rings and turn it off. I do this to warm up the pork chops while I finish preparing everything else.
- Serve pork chops and sauce over rice. Enjoy!

Notes
- Adding the Pineapple. Add it during the last few minutes of cooking to warm through without becoming mushy.
- Remove the Pork Chops. The sauce will thicken up more quickly with the pork chops out of the pot. Once it's thickened you can add them back in to warm up a bit.
