Ingredients

  • 1 head cabbage (small) nappa or savoy
  • 8 cups veggie stock
  • 4 Roma tomato diced
  • 4 celery stalks diced
  • 3 cloves garlic minced
  • 1 onion diced
  • 2 cups strained tomato canned or jarred
  • ¼ cup lemon juice
  • 2 tbsp Italian seasoning
  • 1 tablespoon olive oil extra virgin
  • 1 teaspoon salt

Instructions

  1. In a large pot over medium heat sautee the onions in the olive oil. Once soft add in the garlic, celery, and spices and cook for 2 minutes.
  2. Next add in the fresh and starined tomatoes, veggie broth, and half the cabbage. Cook for about 30 minutes on medium low heat.
  3. Add in the remaining cabbage and cook for another 10 minutes.
