Ingredients
- 1 1/2 lbs cherry tomato or Roma tomatoes - ripe
- 14.5 oz can diced tomatoes petite
- 3 green onions ends trimmed and chopped into thirds
- 1/2 red onion chopped
- 1 jalapeno pepper seeds removed and roughly chopped
- 1 red chili pepper seeds removed and roughly chopped
- 1/3 cup cilantro fresh
- 3 cloves garlic roughly chopped
- 2 tablespoons lime juice fresh
- 1 teaspoon lime zest
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin ground
- salt to taste
- black pepper to taste
Instructions
- Add all the ingredients to a food processor and pulse in 1-second bursts until all ingredients are finely chopped, but still a bit chunky.
- Garnish with fresh chopped parsley and lime wedges on the side and serve with corn chips.
- Store in refrigerator in an airtight container for up to 1 week.
