Easy Iced Lime Cake
Description
Easy Iced Lime Cake features a simple mixture of buttery spread, caster sugar, self-rising flour with baking powder, eggs, milk, and the zest of two limes, baked to a light, moist texture. After baking and cooling slightly, the cake is topped with a poured icing made from icing sugar and fresh lime juice, which sets to a flavorful, lightly tangy glaze. The use of lime zest in the batter and juice in the icing ensures the citrus flavor is evident but not overpowering.
The cake is baked in a square pan until it springs back to touch, indicating a done crumb with a soft center and golden edges. Cooling briefly in the tin before turning out helps the cake hold together well. The pourable lime icing is spread gently over the cake to create a glossy finish. Optional lime zest sprinkled on top adds a decorative burst of color and subtle fragrance.
This cake serves well sliced, alongside tea or coffee. It can be a light finish to a meal or a sweet afternoon snack. The balance of buttery richness and lime acidity creates an enjoyable texture and flavor contrast. It can be stored at room temperature for a couple of days with the icing intact.
Ingredients
- 170 g buttery spread or softened butter, 6 oz
- 170 g caster sugar 6 oz
- 225 g self-rising flour
- 1 ½ tsp baking powder
- 3 egg large
- 3 tbsp milk
- lime zest, grated, quantity: 2 limes
- For the icing:
- lime approx, juice of 1 - 1.5
- 225 g icing sugar 8 oz
- Optional Decoration:
- lime zest
Instructions
- Pre-heat the oven to 180°C.
- Grease and line a 23cm / 9 inch square tin.
- Place all the cake ingredients into a mixer or use a hand mixer and mix until well combined.
- Tip into the tin and spread out to the edges and level with a palette knife.
- Bake for about 35 minutes until springs back to touch or an inserted skewer comes out clean.
- Allow to cool in the tin for 5 minutes before turning onto a rack to cool.
- Make the icing by mixing in enough of the lime juice to make a pourable but not too runny icing (or it will run off the cake).
- Pour onto the cake and allow to spread.
- If you have any more limes you could decorate with some zest.
