Ingredients

  • ¼ cup red wine vinegar
  • 2 tablespoons lemon juice
  • 1 shallot finely diced
  • 1 clove garlic crushed
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey
  • 2 teaspoons dried oregano
  • 2 tablespoons fresh parsley finely chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper freshly ground
  • ½ cup olive oil

  1. Add all the ingredients except for the olive oil to a medium-sized bowl. Use a whisk to combine until mixed.
  2. Whisking constantly, slowly add the olive oil in a steady stream. Whisk until the dressing is emulsified, smooth, and creamy. Adjust seasonings to your taste.
  3. Store it in a sealed jar in the refrigerator, or serve over salad.
