Easy Italian Sub Salad (Healthy Low Carb Recipe)

This Italian sub salad is perfect if you love a classic Italian sandwich but don’t want all the carbs. It’s a healthy, gluten free alternative and jam packed with fresh ingredients and so much flavor!

Ingredients

  • 2-3 hearts of romaine or iceberg lettuce chopped
  • ½ pound salami slices chopped
  • 5 oz pepperonis cut into bites
  • ½ pound Provolone cheese slices chopped
  • 1 cup mini mozzarella balls
  • ½ cup banana pepper rings
  • ½ small red onion chopped
  • ½ cucumber sliced
  • salt and pepper to taste
  • preferred Italian dressing for serving

Instructions

  1. Prepare romaine lettuce, meats, cheeses, and veggies to be chopped
  2. Into a large bowl or 4 individual serving bowls, add the romaine lettuce and top with meats, cheeses, and veggies. Season with salt and pepper to taste; serve with Italian dressing.
