Easy Keto Alfredo Sauce

This Keto Alfredo Sauce is rich, velvety, and packed with classic garlic parmesan flavors. Made in under 15 minutes, it’s the perfect low-carb sauce for zucchini noodles, spaghetti squash, casseroles, and more.

Ingredients

  • 1 ½ cups heavy cream
  • 1 ½ cups Parmesan Cheese grated
  • 1 cup mascarpone cheese
  • ¼ cup unsalted butter
  • 3 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Add the butter to a saucepan over medium heat and sauté the garlic for about 20 seconds.  Be careful not to brown it or it will become very bitter!
  2. Stir in the mascarpone cheese and once it melts, add in the heavy cream and salt.  Then add in the parmesan cheese and simmer on low for about 5-7 minutes or until thickened to your liking.
  3. Serve over zucchini noodles, Palmini, chicken, fish, shrimp or whatever you like! Store leftovers in the fridge in an airtight container for several days or freeze.

Notes

  • If you use a saucepan, rather than a large skillet, the sauce will take a little longer to thicken.
  • The sauce will thicken as it cools.  Reheat in a saucepan or microwave and whisk!  You will still have that same velvetty texture!
