Easy Keto Cheese Sauce
This cheese sauce blends rich cheddar and smooth mascarpone cheeses with heavy cream and butter, accented by lemon zest and black pepper. It thickens over gentle heat to a creamy consistency ideal for pouring or drizzling over vegetables or meats. The sauce’s flavor is creamy and tangy with a bright hint from lemon zest, suitable for keto diets due to its high fat and low carb content.
Ingredients
- 1 cup heavy cream
- 1 ¼ cups cheddar cheese shredded
- ¼ cup mascarpone cheese
- 1 tablespoon butter grass-fed
- lemon zest of 1
- ½ teaspoon black pepper
- 1-2 teaspoons salt to taste
Instructions
- Add the butter to a sauce pan on medium heat. Whisk in the heavy cream and heat for a minute. Then add in the mascarpone cheese, salt and pepper.
- Once the mascarpone is melted, add in the cheddar cheese and stir. Cook over medium low heat for a few minutes, or until the sauce has thickened to your liking. Mine took a little over 3 minutes.
- Once thickened, add in the lemon zest and serve.
Notes
- For a brighter citrus note, add the zest of two lemons when serving with vegetables like broccoli or asparagus.
