Description

The Easy Keto Cheese Sauce begins by melting butter in a saucepan over medium heat and whisking in heavy cream and mascarpone cheese, which melts down smoothly to create a rich base. Salt and black pepper season the mixture, and shredded cheddar cheese is folded in and cooked over medium-low heat until thickened, forming a creamy, smooth sauce. Finishing with lemon zest adds a subtle brightness that lifts the rich, cheesy flavor. This sauce is thick enough to coat or drizzle and complements vegetables like broccoli or asparagus, or proteins for added creaminess without carbs. The focus is on slow, even heat to properly melt cheeses while developing ideal texture.

Ingredients

  • 1 cup heavy cream
  • 1 ¼ cups cheddar cheese shredded
  • ¼ cup mascarpone cheese
  • 1 tablespoon butter grass-fed
  • lemon zest of 1
  • ½ teaspoon black pepper
  • 1-2 teaspoons salt to taste

Instructions

  1. Add the butter to a sauce pan on medium heat.  Whisk in the heavy cream and heat for a minute.  Then add in the mascarpone cheese, salt and pepper.
  2. Once the mascarpone is melted, add in the cheddar cheese and stir.  Cook over medium low heat for a few minutes, or until the sauce has thickened to your liking.  Mine took a little over 3 minutes.  
  3. Once thickened, add in the lemon zest and serve.

Notes

  • For a brighter citrus note, add the zest of two lemons when serving with vegetables like broccoli or asparagus.
