Easy Keto Peanut Butter Cookies
Description
This recipe blends peanut butter with butter, egg, vanilla extract, and granulated Splenda as a sugar substitute. The mixture is shaped into balls and gently flattened with a fork. Baking at 350°F for 12 minutes yields cookies that maintain shape and have a soft texture. Letting them cool before handling prevents them from breaking apart.
The cookies do not spread significantly during baking, so the fork press provides the characteristic pattern. They can be frozen and reheated briefly in the microwave for convenience, making them suitable for make-ahead and keto-friendly snacks.
Ingredients
- 9 tbsp peanut butter
- 4 tbsp water
- 2 tbsp butter
- 1 egg
- 1 tsp vanilla
- ½ cup splenda granulated
Instructions
- Preheat oven to 350 degrees F.
- Put parchment paper on your baking sheet.
- Add ingredients to large bowl, mix well with a spoon or fork.
- Form dough into 12 balls.
- Flatten dough balls a little with a fork (this dough doesn't spread much at all, even though it looks more thin than regular cookie dough).
- Bake at 350 for 12 minutes.
- Let cool at least 5 minutes before lifting (to prevent them from falling apart), then serve and enjoy!
- If freezing, pop them into the microwave for 10-15 seconds when fresh out of the freezer.
