Ingredients

  • 3 chicken breast cooked; shredded or diced; about 30 ounces raw, 22 ounces cooked, large
  • 1 ounce pepperoni diced; about 15 slices
  • 1 ½ cups pizza sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano dried
  • ½ teaspoon red pepper flakes
  • 1 cup mozzarella cheese 4 ounces, shredded
  • 2 tablespoons parmesan grated
Toppings:
  • ¾ cup mozzarella cheese shredded; 3 ounces
  • 1 ½ ounce pepperoni about 20 slices

Instructions

  1. Preheat the oven to 400°F. Lightly grease a 2-quart casserole dish.
  2. In a large bowl, mix the shredded chicken, diced pepperoni, pizza sauce, garlic powder, dried oregano, red pepper flakes, 1 cup of mozzarella, and parmesan.
  3. Transfer the mixture to the prepared baking dish.
  4. Top the casserole with the remaining ¾ cup of mozzarella cheese and the pepperoni slices.
  5. Bake the casserole until it's heated through and the cheese is melted, for about 15 minutes. Allow it to rest for 5 minutes before serving.

Notes

  • Use rotisserie chicken with skin removed to ensure proper texture in the casserole.
  • Garnish the casserole with dried parsley or oregano and additional red pepper flakes if desired for presentation.
  • Store leftovers in an airtight container in the fridge for 3-4 days and reheat covered at 50% microwave power.
