Easy Lemon Blueberry Muffins

Ingredients

  • 1 package lemon cake mix dry mix only
  • 1/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 3 eggs
  • 2/3 cup milk
  • 1/3 cup vegetable oil
  • 1 1/2 cups frozen blueberries

Instructions

  1. Preheat the oven to 350ºF. Grease 18 muffin cups or line with paper liners.
  2. In a large bowl, combine the dry cake mix, flour and baking powder. Whisk to combine.
  3. In another bowl, whisk together the eggs, milk and oil.
  4. Pour the wet ingredients into the dry ingredients and stir together just until blended.
  5. Add the frozen blueberries and fold in just until combined.
  6. Scoop the batter into the prepared cups, dividing the batter evenly between the cups, about 2/3 full.
  7. Bake in the preheated oven until set, about 17 to 23 minutes.
