Easy Loaded Black Bean Quesadillas

These Easy Loaded Black Bean Quesadillas fill tortillas with sautéed onions, bell peppers, black beans, spinach, and cheese seasoned with taco spices. Crispy on the outside with melted cheese inside, they combine savory flavors and a satisfying texture. Cooking over moderate heat ensures the tortillas crisp without burning while the cheese melts thoroughly.

Ingredients

  • 2 tablespoon olive oil
  • 1 cup onion sliced
  • 1 cup bell pepper sliced
  • 1 cup black beans I used canned
  • 1 cup spinach chopped (optional)
  • 2 tablespoon taco seasoning adjust to taste
  • 1/2 teaspoon salt adjust to taste
  • 1 teaspoon lime juice
  • 4 tortilla medium
  • 2 cup Mexican cheese blend or Cheddar cheese 

Instructions

  1. Rinse and drain the canned black beans (or use precooked homemade black beans). Put them aside.
  2. In a pan over medium-high heat, sauté onion and bell pepper in oil for 2-3 minutes, or until tender. 
  3. Combine the black beans, chopped spinach, taco seasoning, and salt. Cook for another 1-2 minutes. Set aside this filling.
  4. In a large pan or griddle, drizzle a thin layer of oil or spray with cooking spray over the top.
  5. Spread the cheese(optional), beans mixture, and again cheese on the tortillas. Wrap the tortilla into half around the filling.
  6. Cook for 2-3 minutes per side on medium-high heat, or until the outside is crispy and the cheese has completely melted. Repeat until all tortillas are filled and all fillings are used.
  7. Serve with salsa, guacamole or sour cream on the side.

Notes

  • Prepare each quesadilla with a single tortilla folded in half for easier flipping and slicing.
  • Use moderate heat to brown tortillas slowly and melt cheese without burning the exterior.
  • Slice vegetables thinly to keep fillings secure within the quesadilla and avoid mess.
