Ingredients

  • cheese feta, mozzarella, provolone, or a combination, cut into cubes
  • salami cut into bite-sized pieces
  • pickles assorted pickles including cornichons, drained and roughly chopped
  • olives
  • Pepperoncini
  • olive oil
  • red wine vinegar
  • garlic 2 cloves, minced
  • dried Italian herbs or a mix of oregano, basil, and thyme
  • red pepper flakes optional, for heat
  • salt to taste
  • black pepper to taste
  • parsley optional garnishes
  • bread
  • crackers

Instructions

  1. Combine ingredients: In a medium bowl, combine the cubed cheese, salami, and chopped pickles.
  2. Make the marinade: In a separate small bowl, whisk together the olive oil, red wine vinegar, minced garlic, Italian herbs, red pepper flakes (if using), salt, and pepper.
  3. Marinate: Pour the marinade over the cheese, salami, and pickle mixture. Stir gently to coat everything evenly.
  4. Chill: Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  5. Serve: Serve the marinated cheese appetizer chilled or at room temperature. Garnish with fresh parsley, if desired. Serve with crusty bread or crackers for dipping.

Notes
