Easy Marinated Mushrooms
These marinated cremini mushrooms are lightly cooked until just tender, then soaked in a tangy mixture of olive oil, white wine vinegar, garlic, and aromatic herbs. The mushrooms develop a balanced flavor with a hint of sweetness from brown sugar and subtle heat from optional red pepper flakes. Chilled for several hours, they absorb the marinade fully, resulting in a tender and flavorful appetizer or condiment with fresh parsley adding brightness at serving.
Ingredients
- 1 pound cremini mushrooms
- ¼ cup olive oil
- ¼ cup white wine vinegar
- ¼ cup red onion diced
- 2 cloves garlic minced
- 2 teaspoons brown sugar packed
- ½ teaspoon oregano dried
- ½ teaspoon black peppercorns whole
- ¼ teaspoon red pepper flakes optional, crushed
- 1 bay leaf
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 2 tablespoons parsley chopped fresh leaves
Instructions
- In a large pot of boiling salted water, cook mushrooms just until tender, about 3-4 minutes; drain well.
- In a large bowl, combine mushrooms, olive oil, vinegar, red onion, garlic, sugar, oregano, peppercorns, red pepper flakes and bay leaf; season with salt and pepper, to taste.
- Transfer to an airtight container and place in the refrigerator for at least 8 hours and up to 5 days.
- Serve at room temperature, garnished with parsley, if desired.
