Description
Easy Marinated Mushrooms combines cremini mushrooms cooked briefly in boiling water and drained to achieve a tender texture. They are then combined with olive oil, white wine vinegar, diced red onion, minced garlic, and seasonings including brown sugar, oregano, whole black peppercorns, and a bay leaf. The optional crushed red pepper flakes add a mild heat while the vinegar contributes acidity balancing the earthiness of the mushrooms. Chilling the mixture for at least 8 hours allows the mushrooms to absorb the marinade flavors fully.
The final marinated mushrooms are served at room temperature, garnished with fresh parsley, which provides a fresh herbal note to complement the tangy and savory marinade. Ingredients
- 1 pound cremini mushrooms
- ¼ cup olive oil
- ¼ cup white wine vinegar
- ¼ cup red onion diced
- 2 cloves garlic minced
- 2 teaspoons brown sugar packed
- ½ teaspoon oregano dried
- ½ teaspoon black peppercorns whole
- ¼ teaspoon red pepper flakes optional, crushed
- 1 bay leaf
- salt to taste, Kosher salt and freshly ground

- 2 tablespoons parsley chopped fresh leaves
Instructions
- In a large pot of boiling salted water, cook mushrooms just until tender, about 3-4 minutes; drain well.
- In a large bowl, combine mushrooms, olive oil, vinegar, red onion, garlic, sugar, oregano, peppercorns, red pepper flakes and bay leaf; season with salt and pepper, to taste.
- Transfer to an airtight container and place in the refrigerator for at least 8 hours and up to 5 days.
- Serve at room temperature, garnished with parsley, if desired.
