Easy Migas Breakfast Tacos

These epic migas tacos are easy to make, and with just a few ingredients, you can enjoy epic tacos for breakfast fast!

Ingredients

  • 1 ½ teaspoons olive oil or spray
  • ½ cup Pico de Gallo
  • 8 large eggs beaten
  • ½ cup tortilla chips roughly crushed
  • ½ cup shredded cheddar cheese plus more for serving
  • 8 corn tortillas
  • 1 avocado
  • fresh cilantro chopped

Instructions

  1. In a large skillet, heat the oil over medium-high heat. Add the pico de gallo and cook, stirring, for about 4 minutes, until the onion has softened. Pour the eggs into the skillet and cook. Add the tortilla chips and shredded cheese, toss to combine, and remove from the heat.
  2. Divide the cooked egg mixture over the corn tortillas, sprinkle with additional cheese, and top with avocado slices and cilantro.
