Ingredients
- 8 hard boiled eggs
- ½ cup mayonnaise
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 tablespoons pickle relish
- 8 mini hamburger buns or brioche buns sliced in half
Instructions
- Place the boiled eggs in a bowl and mash with a fork.
- Add the mayonnaise, salt, pepper, and relish and gently fold through until well mixed.
- Divide the egg salad between the rolls.
