Easy Mole Recipe
Easy Mole Recipe creates a rich sauce by simmering a blend of onions, garlic, chipotle peppers, diced tomatoes with green chiles, and peanut butter, then blending these with spices, chicken broth, and unsweetened chocolate. The sauce has a complex, smoky, and slightly spicy flavor balanced with the creamy peanut butter and dark chocolate, suitable for serving over chicken or other dishes.
Ingredients
- 2 tablespoons olive oil
- 1 onion chopped
- 3 cloves garlic minced
- 1 chipotle pepper in adobo sauce chopped
- 2 teaspoons adobo sauce from the chipotle pepper can
- 14.5 ounces diced tomatoes with green chiles 1 can
- 4 tablespoons peanut butter creamy
- 2 cups chicken broth low-sodium
- 2 teaspoons chili powder
- ½ teaspoon ground cinnamon
- 1 teaspoon sea salt coarse
- 1 teaspoon black pepper ground
- 2 ounces unsweetened chocolate
Instructions
- Place a pot over medium heat and add the oil.
- Add the onion and garlic, stirring often, for 5 minutes until softened and fragrant.
- Add the chipotle pepper, adobo sauce, and tomatoes with green chiles. Stir to combine. Reduce to a simmer and allow to cook for 10-15 minutes, stirring occasionally.
- Carefully pour the mixture into a food processor.
- Add the peanut butter, chicken broth, chili powder, cinnamon, salt and pepper. Blend until well combined.
- Return the mixture to the pot over medium heat. Cook to reduce for 15 minutes, stirring occasionally.
- Add the chocolate and stir until melted.
Notes
- Store the mole sauce in an airtight container refrigerated for up to two weeks or freeze for up to two months.
- Use this sauce to make traditional Chicken Mole by cooking chicken in the sauce.
