Easy Mole Recipe
Description
The Easy Mole Recipe begins by softening onions and garlic in olive oil to build a savory base. Chipotle peppers in adobo sauce and diced tomatoes with green chiles add smoky heat and acidity. This mixture simmers before being pureed with creamy peanut butter, low-sodium chicken broth, chili powder, cinnamon, salt, pepper, and unsweetened chocolate. After blending, the sauce returns to the pot to reduce and thicken, melding the flavors further. The resulting sauce is dense, with layers of smoky, spicy, and subtly sweet notes highlighted by the richness of chocolate and peanut butter.
This homemade mole sauce complements chicken well, providing a flavorful coating or dip. It can be refrigerated for up to two weeks or frozen for two months, allowing for advance preparation and flexible use in meals.
