Ingredients

  • 2 kg unsmoked gammon joint
  • 750 ml mulled red wine
  • 1 tablespoon runny honey
  • 1 tablespoon mustard
  • A handful of cloves

Instructions

    Cup of Yum
  1. Preheat your oven to 200C /180C fan / gas mark 6 / 400F.
  2. Place your ham in a large pot and pour over the mulled wine. Cover with a tight fitting lid and cook in the oven for 2 hours, turning the ham every 30 minutes or so to ensure the ham cooks evenly.
  3. Just before the ham is due to come out, mix the honey and mustard together.
  4. After the 2 hours is up, remove the ham from the pot and (when cool enough to do so) remove the rind. Score the fat in a diamond pattern and slather with the honey and mustard mixture.
  5. Poke a clove into each cross and then return the ham to the oven for 20-30 minutes, until the ham looks a lovely burnished colour, but before the glaze starts to burn.

Notes

  • 200C /180C fan / gas mark 6 / 400F
  • This recipe can be adjusted to the size of your ham. Allow 30 minutes per 500g ham for the poaching. The roasting time should be roughly the same (20-30 minutes), regardless of the size of your ham. If your ham is much bigger than mine, you will also need to increase the poaching liquid – it should come at least half way up the ham, either add some water or another bottle of mulled wine!
  • Do take care when turning the ham in the hot liquid – I nearly burnt myself on several occasions! If you don't fancy the idea of turning the ham, add more mulled wine /water so the ham is completely submerged.
  • The ham can be reheated the next day. Cover with foil and place in a cold oven. Turn the oven up to 200C /180C fan / gas mark 6 / 400F and cook for 30-40 minutes or until piping hot in the middle.
  • Suitable for freezing.
