Easy Mushroom Stuffing Recipe
This mushroom stuffing combines golden toasted bread cubes with a sautéed mixture of red onion, garlic, celery, carrot, and fresh mushrooms simmered in vegetable stock. The absorption of the flavorful liquid by the toasted bread results in a moist, textured stuffing that balances tender vegetables with crispy edges. Fresh thyme adds aromatic notes, making it suitable as a side dish particularly during festive meals or as a comforting complement to roasted dishes.
Ingredients
- 1 bread cubed, loaf
- 2 tablespoons vegetable oil
- 1 red onion sliced
- 1 garlic diced, clove
- 1 celery diced, rib
- 1 carrot diced, medium
- 2 cups mushrooms sliced
- salt to taste
- black pepper to taste
- thyme fresh
- 2 cups vegetable stock
Instructions
- Preheat the oven to 375 degrees F.
- Place the bread on a baking tray for about 15 minutes, until it becomes golden and crispy.
- Meanwhile, heat the oil in a large pan over medium heat and saute the onions, garlic, celery, and carrots.
- After 2 minutes you can add in the mushrooms and season with fresh thyme, salt, and pepper.
- Let that cook for another 5 minutes and now add in the vegetable stock. Let it simmer for 2 minutes and remove from heat.
- Transfer the vegetables to the tray with the bread, but make sure that all the liquid has been absorbed (that will assure that the bread won’t become soggy).
Notes
- Use slightly stale or dry bread to ensure better absorption without sogginess.
- Cut bread into bite-sized cubes for easier eating and even toasting.
- You can double the mushrooms or reduce bread quantity to increase vegetable content.
- Try different mushroom varieties to vary the flavor.
