  • 1 bread cubed, loaf
  • 2 tablespoons vegetable oil
  • 1 red onion sliced
  • 1 garlic diced, clove
  • 1 celery diced, rib
  • 1 carrot diced, medium
  • 2 cups mushrooms sliced
  • salt to taste
  • black pepper to taste
  • thyme fresh
  • 2 cups vegetable stock

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Place the bread on a baking tray for about 15 minutes, until it becomes golden and crispy.
  3. Meanwhile, heat the oil in a large pan over medium heat and saute the onions, garlic, celery, and carrots.
  4. After 2 minutes you can add in the mushrooms and season with fresh thyme, salt, and pepper.
  5. Let that cook for another 5 minutes and now add in the vegetable stock. Let it simmer for 2 minutes and remove from heat.
  6. Transfer the vegetables to the tray with the bread, but make sure that all the liquid has been absorbed (that will assure that the bread won’t become soggy).
