Easy Oatmeal Apple Crumble

Quick, easy, healthy apple crumble recipe, filled with baked apple chunks then topped with a delicious crunchy topping made with oats, walnuts, and loads of fall flavors.

Ingredients

  • 1½ Cup old-fashioned oats
  • ½ Cup walnuts roughly chopped
  • 1 teaspoon ground cinnamon
  • ¼ cup maple syrup
  • 2 tablespoons coconut oil
For the filling
  • 6 Cups Small-diced Apples of choice about 3 large apples
  • 2 tablespoons coconut sugar
  • 2 tablespoons cornstarch
  • 1½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350°F, and coat a 2 quarts casserole dish with nonstick cooking spray.
  2. In a mixing bowl combine together the oats, walnuts, cinnamon, maple syrup, and coconut oil. Using your fingers or a spoon stir until crumbly.
  3. In another bowl, toss the apples with the cornstarch, coconut sugar, cinnamon, and nutmeg, until evenly coated.
  4. Transfer the filling to the prepared dish, and gently press down with a spatula. Sprinkle evenly with the oatmeal topping.
  5. Bake at 350°F for 35-40 minutes or until the apples are tender and the tops are crisp and brown. Enjoy!

Notes

  • Use rolled oats and not quick oats. A gluten-free option is fine too.
  • Any tarte and crispy apple will work.
  • Use light brown sugar instead of coconut sugar if you prefer.
  • You may use melted butter in place of the coconut oil if you prefer.
  • Store leftovers in the fridge for up to 5 days.
  • Ovens vary, keep an eye on it and if the apples look tender and the oats are browned by 30 minutes you can remove them from the oven.
  • I love the walnuts in this recipe but if you want to use pecans or almonds that's fine too.
