Quick, easy, healthy apple crumble recipe, filled with baked apple chunks then topped with a delicious crunchy topping made with oats, walnuts, and loads of fall flavors.

Ingredients
- 1½ Cup old-fashioned oats
- ½ Cup walnuts roughly chopped
- 1 teaspoon ground cinnamon
- ¼ cup maple syrup
- 2 tablespoons coconut oil
For the filling
- 6 Cups Small-diced Apples of choice about 3 large apples
- 2 tablespoons coconut sugar
- 2 tablespoons cornstarch
- 1½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg

Instructions
- Preheat the oven to 350°F, and coat a 2 quarts casserole dish with nonstick cooking spray.
- In a mixing bowl combine together the oats, walnuts, cinnamon, maple syrup, and coconut oil. Using your fingers or a spoon stir until crumbly.
- In another bowl, toss the apples with the cornstarch, coconut sugar, cinnamon, and nutmeg, until evenly coated.
- Transfer the filling to the prepared dish, and gently press down with a spatula. Sprinkle evenly with the oatmeal topping.
- Bake at 350°F for 35-40 minutes or until the apples are tender and the tops are crisp and brown. Enjoy!
Notes
- Use rolled oats and not quick oats. A gluten-free option is fine too.
- Any tarte and crispy apple will work.
- Use light brown sugar instead of coconut sugar if you prefer.
- You may use melted butter in place of the coconut oil if you prefer.
- Store leftovers in the fridge for up to 5 days.
- Ovens vary, keep an eye on it and if the apples look tender and the oats are browned by 30 minutes you can remove them from the oven.
- I love the walnuts in this recipe but if you want to use pecans or almonds that's fine too.
