Easy One Pot Mascarpone Lasagna

This lasagna recipe is rich with creamy mascarpone cheese, sweet Italian sausage, cherry tomatoes and spinach for a hearty sauce that all comes together in one pan. There is no boiling or layering. It’s the easiest 30 minute lasagna you will ever make in a single pot!

Ingredients

  • 1 tablespoon olive oil
  • ½ pound ground beef
  • ½ pound sweet Italian sausage
  • 1 small red onion diced
  • 1 cup cherry tomatoes halved
  • 2 cups spinach
  • 2 cups pasta sauce
  • 1 teaspoon roasted garlic powder
  • 1 teaspoon dried oregano seasoning
  • 1 teaspoon Italian seasoning
  • 8 ounces no boil lasagna noodles broken in half
  • 2 cups chicken broth or water
  • 1 egg
  • 8 ounces mascarpone cheese
  • ¼ cup grated Parmesan cheese
  • ½ cup shredded Mozzarella cheese
  • salt and pepper to taste
  • fresh parsley leaves chopped, if desired for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and sweet Italian sausage and cook until browned, about 3-5 minutes; drain excess fat.
  2. Add in diced red onion, spinach, cherry tomatoes, pasta sauce, garlic powder, oregano, and Italian seasoning; season with salt and pepper to taste. Mix well.
  3. Bring to a simmer, add in lasagna sheets (broken in half) and 2 cups water or chicken broth. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-14 minutes.
  4. While pasta cooks, in a medium bowl combine mascarpone cheese, parmesan cheese and 1 egg. Mix well and season with salt and pepper to taste.
  5. Turn-off heat. Stir in mozzarella cheese until well combined. Using a small ice cream scoop, top with dollops of the mascarpone mixture and cover until heated through, about 3-5 minutes.
  6. Serve immediately, garnish with additional Italian seasoning and parsley, if desired.
