Easy One Pot Sausage and Rice Skillet

This Easy Sausage, peppers and rice casserole is all cooked in one pot on the stovetop. The perfect healthy dinner for weeknights.

Ingredients

  • 4 al fresco roasted garlic fully cooked chicken sausages sliced
  • 2 TBSP olive oil divided
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 onion diced
  • 4 garlic cloves minced
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp Turmeric
  • 1 tsp dried oregano
  • Pinch red pepper flakes
  • 1 cup uncooked white jasmine rice
  • 2 cups low sodium chicken stock
  • 3/4 tsp kosher salt more or less to taste
  • 1 TBSP fresh parsley chopped (optional)

Instructions

  1. Add 1 tbsp olive oil to a large saucepan over medium heat.
  2. Add sausage slices and brown, 2-3 minutes per side. Remove from pan.
  3. Add remaining 1 tbsp olive oil to pan.
  4. Add onion and bell peppers, season with salt and pepper. Sauté until soft 5-8 mins.
  5. Add tomato paste, garlic, spices and kosher salt. Stir to combine, 30-60 seconds.
  6. Add rice and stir to combine. Pour in chicken stock and return sausages to pan.
  7. Bring to simmer, then reduce to low heat and cover. Cook for 20-25 minutes, until liquid has evaporated and rice is cooked.
  8. Garnish with fresh chopped parsley if desired, serve.
