Easy One Pot Sausage and Rice Skillet
This Easy Sausage, peppers and rice casserole is all cooked in one pot on the stovetop. The perfect healthy dinner for weeknights.

Ingredients
- 4 al fresco roasted garlic fully cooked chicken sausages sliced
- 2 TBSP olive oil divided
- 1 red bell pepper diced
- 1 green bell pepper diced
- 1 onion diced
- 4 garlic cloves minced
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1 tsp Turmeric
- 1 tsp dried oregano
- Pinch red pepper flakes
- 1 cup uncooked white jasmine rice
- 2 cups low sodium chicken stock
- 3/4 tsp kosher salt more or less to taste
- 1 TBSP fresh parsley chopped (optional)
Instructions
- Add 1 tbsp olive oil to a large saucepan over medium heat.
- Add sausage slices and brown, 2-3 minutes per side. Remove from pan.
- Add remaining 1 tbsp olive oil to pan.
- Add onion and bell peppers, season with salt and pepper. Sauté until soft 5-8 mins.
- Add tomato paste, garlic, spices and kosher salt. Stir to combine, 30-60 seconds.
- Add rice and stir to combine. Pour in chicken stock and return sausages to pan.
- Bring to simmer, then reduce to low heat and cover. Cook for 20-25 minutes, until liquid has evaporated and rice is cooked.
- Garnish with fresh chopped parsley if desired, serve.
