Easy Pea Salad

Ingredients

  • 4 cups green peas frozen
  • 4 ounces cheddar cheese shredded sharp
  • 1/4 cup Bacon cooked and crumbled
  • 1/2 medium red onion thinly sliced or diced
  • 2 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dill dried
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place peas in a microwave safe bowl. Microwave in 90 second increments, stirring in between, until peas are just barely thawed, but not hot.
  2. Meanwhile, dice cheddar cheese into small cubes, or shred. Add cheese in with peas. Toss together with crumbled bacon and red onion.
  3. Add in sour cream, mayonnaise, cider vinegar, dried dill, salt, and pepper. Stir until well combined. Taste and add more salt and pepper to taste.
  4. Cover and chill in the refrigerator at least 1 hour before serving.

Notes

  • Bacon can be cooked in the oven ahead of time or replaced with store-bought cooked bacon bits for convenience.
  • Chill the salad for at least one hour before serving to allow flavors to blend.
  • Adjust salt and pepper to taste after mixing the dressing with the ingredients.
