Easy Pea Salad
Easy Pea Salad combines tender green peas with sharp cheddar cheese, crisp red onion, and smoky bacon for a contrasting mix of flavors and textures. Tossed in a creamy dressing made from sour cream, mayonnaise, apple cider vinegar, and dill, this chilled salad achieves a balance of cool freshness and savory richness. Ingredients
- 4 cups green peas frozen
- 4 ounces cheddar cheese shredded sharp
- 1/4 cup Bacon cooked and crumbled
- 1/2 medium red onion thinly sliced or diced
- 2 tablespoons sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon dill dried
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place peas in a microwave safe bowl. Microwave in 90 second increments, stirring in between, until peas are just barely thawed, but not hot.
- Meanwhile, dice cheddar cheese into small cubes, or shred. Add cheese in with peas. Toss together with crumbled bacon and red onion.
- Add in sour cream, mayonnaise, cider vinegar, dried dill, salt, and pepper. Stir until well combined. Taste and add more salt and pepper to taste.
- Cover and chill in the refrigerator at least 1 hour before serving.
Notes
- Bacon can be cooked in the oven ahead of time or replaced with store-bought cooked bacon bits for convenience.
- Chill the salad for at least one hour before serving to allow flavors to blend.
- Adjust salt and pepper to taste after mixing the dressing with the ingredients.
