Easy Pea Salad
Description
This salad uses frozen peas thawed just until no longer fully frozen, preserving their bright green color and slight snap. Sharp cheddar cheese adds depth, while cooked and crumbled bacon brings a smoky crunch. Red onion slices contribute mild bite and texture contrasts. The dressing combines sour cream and mayonnaise for creaminess, balanced by apple cider vinegar's tang and dried dill's herbaceous note. Salt and pepper adjust seasoning to taste.
Chilling the salad at least an hour allows flavors to meld and the dressing to coat the ingredients evenly. It pairs well alongside grilled meats, sandwiches, or as a standalone light dish.

Ingredients
- 4 cups green peas frozen
- 4 ounces cheddar cheese shredded sharp
- 1/4 cup Bacon cooked and crumbled
- 1/2 medium red onion thinly sliced or diced
- 2 tablespoons sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon dill dried
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place peas in a microwave safe bowl. Microwave in 90 second increments, stirring in between, until peas are just barely thawed, but not hot.
- Meanwhile, dice cheddar cheese into small cubes, or shred. Add cheese in with peas. Toss together with crumbled bacon and red onion.
- Add in sour cream, mayonnaise, cider vinegar, dried dill, salt, and pepper. Stir until well combined. Taste and add more salt and pepper to taste.
- Cover and chill in the refrigerator at least 1 hour before serving.
Notes
- Bacon can be cooked in the oven ahead of time or replaced with store-bought cooked bacon bits for convenience.
- Chill the salad for at least one hour before serving to allow flavors to blend.
- Adjust salt and pepper to taste after mixing the dressing with the ingredients.
