Easy Peach Cobbler (Using Fresh, Frozen or Canned Peaches)

This peach cobbler uses fresh, frozen, or canned peaches combined with a simple cornstarch-sugar mixture to create the fruit base, topped with a home-style batter made from flour, sugar, butter, and baking powder. The peaches are gently prepared and sweetened, then baked with a soft, tender topping that browns lightly in the oven. The result is a comforting dessert that balances juicy, lightly thickened peach filling with a mildly sweet, cake-like crust.

Ingredients

Ingredients for the Fruit Base
  • 3 c peaches (peeled, sliched, fresh, frozen or canned, drain the peaches if using canned) less if desired
  • 1 tsp lemon juice (freshly squeezed)
  • ¼ cup sugar (add a little more if you like a sweeter flavor, a little less if using canned peaches)
  • 1 ½ tsp cornstarch

  • ⅓ c sugar
  • 3 oz butter salted, (¾ stick)
  • 1 egg (beaten)
  • 1 c all-purpose flour
  • 1 ½ tsp baking powder

Instructions

  1. Preheat oven to 350º F (180º C).
  2. Butter the inside of a , or similar sized baking dish.
Prepare the Peaches.
  1. If using fresh peaches, here's a quick and easy tutorial on easily peeling those beauties. 
  2. Score a short line with a knife at the bottom of each peach. Gently add the peaches to a pot of boiling water using a spoon and remove after about 45 seconds. Immediately plunge into an ice bath.
  3. The peaches' skin will now peel off easily using the the scored line as a starting point.
  4. Perfectly peeled, and no stress or fighting with stubborn peach skins. Slice the peaches and keep them in a bowl. (Be sure to drain the peaches if you're using canned.)
  5. Squeeze about 1 teaspoon of fresh lemon juice onto the peaches.
  6. Now, stir the cornstarch into the sugar, and add it to the peaches in the bowl; mix gently.
  7. Place the sweetened peaches into the buttered pie dish.
Make the Easy Peach CobblerTopping
  1. Sift the flour and baking powder into a bowl so that they are evenly mixed. 
  2. Cream the sugar and butter until light and fluffy. Beat in the egg, then gently fold in the flour and baking powder until well combined, without overmixing.
  3. Drop large spoonfuls of the dough onto the peaches in the pie dish.
  4. Bake for 35 to 45 minutes (depending on your oven) or until the topping is baked through, and golden brown. Remove from the oven. Allow the easy peach cobbler to cool slightly before serving. 

Notes

  • Defrost frozen peaches before use and drain excess liquid to avoid a watery filling.
  • Adjust cornstarch amount when using frozen peaches with extra liquid to achieve desired thickness.
  • Drain canned peaches thoroughly to prevent the topping from becoming soggy.
  • Use fresh lemon juice to brighten the peach flavor and balance sweetness.
