Ingredients

  • 6 cups peaches peeled, pitted and thinly sliced
  • ¼ cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon light brown sugar
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla
  • ½ teaspoon salt
For the Topping:
  • 1 ⅓ cup old fashioned oats
  • ¾ cup all purpose flour
  • ¼ cup sugar
  • ¼ cup light brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • ½ cup butter room temp

Instructions

  1. Preheat the oven to 400°. Grease or butter a 9x9-inch baking dish.
  2. In a large mixing bowl, combine peaches, sugar, cornstarch, brown sugar, lemon juice, vanilla and salt. Toss well to coat. Set aside.
  3. In a medium sized mixing bowl, combine oats, flour, sugar, brown sugar, cinnamon, salt, and nutmeg.
  4. Add the butter and work it into the mixture using a fork or pastry cutter, until the mixture is crumbly.
  5. Transfer the peach and sugar mixture to the prepared baking dish.
  6. Evenly distribute the topping over the peach mixture.
  7. Place the baking dish on the center rack of the oven and bake for 20-30 minutes or until golden brown on top.
  8. Remove from the oven and cool for about 10 minutes before serving.
  9. Serve with ice cream if desired.

Notes

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave for about 30 seconds.
