Ingredients
- 6 cups peaches peeled, pitted and thinly sliced
- ¼ cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon light brown sugar
- 2 teaspoons lemon juice
- 1 teaspoon vanilla
- ½ teaspoon salt
For the Topping:
- 1 ⅓ cup old fashioned oats
- ¾ cup all purpose flour
- ¼ cup sugar
- ¼ cup light brown sugar
- 1 teaspoon cinnamon
- ½ teaspoon salt
- ¼ teaspoon nutmeg
- ½ cup butter room temp

Instructions
- Preheat the oven to 400°. Grease or butter a 9x9-inch baking dish.
- In a large mixing bowl, combine peaches, sugar, cornstarch, brown sugar, lemon juice, vanilla and salt. Toss well to coat. Set aside.
- In a medium sized mixing bowl, combine oats, flour, sugar, brown sugar, cinnamon, salt, and nutmeg.
- Add the butter and work it into the mixture using a fork or pastry cutter, until the mixture is crumbly.
- Transfer the peach and sugar mixture to the prepared baking dish.
- Evenly distribute the topping over the peach mixture.
- Place the baking dish on the center rack of the oven and bake for 20-30 minutes or until golden brown on top.
- Remove from the oven and cool for about 10 minutes before serving.
- Serve with ice cream if desired.
Notes
- Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave for about 30 seconds.
