Ingredients
- 3 ripe peaches pitted and diced
- 1 Roma tomato diced
- ½ red onion finely diced
- 1 small red or green bell pepper finely diced
- ¼ cup of cilantro minced
- 1 to 2 limes zest and juice
- 1 Jalapeño minced (optional)
- salt and pepper to taste
Instructions
- Add the peaches, tomatoes, onion, bell pepper, cilantro, juice and zest of one lime, jalapeno, and salt and pepper to taste in a bowl. Mix well and adjust the lime, salt, or pepper levels. Serve at room temperature or chilled.
