- 3 ripe peaches pitted and diced
 - 1 Roma tomato diced
 - ½ red onion finely diced
 - 1 small red or green bell pepper finely diced
 - ¼ cup of cilantro minced
 - 1 to 2 limes zest and juice
 - 1 Jalapeño minced (optional)
 - salt and pepper to taste
 
Instructions
- Add the peaches, tomatoes, onion, bell pepper, cilantro, juice and zest of one lime, jalapeno, and salt and pepper to taste in a bowl. Mix well and adjust the lime, salt, or pepper levels. Serve at room temperature or chilled.

- Choose fresh, ripe peaches: They should be slightly soft but not mushy for the best flavor, sweetness, and texture.
 - Leave it to rest: 20-30 minutes before serving allows the flavors to meld for an overall better tomato jalapeño peach salsa.
