Ingredients

  • 3 ripe peaches pitted and diced
  • 1 Roma tomato diced
  • ½ red onion finely diced
  • 1 small red or green bell pepper finely diced
  • ¼ cup of cilantro minced
  • 1 to 2 limes zest and juice
  • 1 Jalapeño minced (optional)
  • salt and pepper to taste

  1. Add the peaches, tomatoes, onion, bell pepper, cilantro, juice and zest of one lime, jalapeno, and salt and pepper to taste in a bowl. Mix well and adjust the lime, salt, or pepper levels. Serve at room temperature or chilled.

Notes

  • Choose fresh, ripe peaches: They should be slightly soft but not mushy for the best flavor, sweetness, and texture.
  • Leave it to rest: 20-30 minutes before serving allows the flavors to meld for an overall better tomato jalapeño peach salsa.
  • To adjust texture: Simple change how finely you chop the ingredients. A fine dice means you get every flavor in a single bite. Chunkier peach bits help them take a more ‘forward’ role in the salsa, etc.
  • to save time: If you have a food chopper, use it.
