Easy Peach Turnovers

Ingredients

Turnovers
  • 2 heets puff pastry thawed according to package directions
  • 2 large fresh peaches peeled, pitted, and diced (about 1 ½ cups)
  • ¼ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground cloves
  • Pinch of salt
  • 1 large egg for an egg wash
Optional Glaze
  • ½ cup powdered sugar
  • 1 tablespoon salted butter melted
  • 2-3 teaspoons milk

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Combine peaches, brown sugar, lemon juice, cornstarch, cinnamon, cloves, and salt in a bowl.
  3. Roll out a sheet of puff pastry into an 11-inch square.
  4. Cut into four equal-sized squares.
  5. Spoon ⅛ of the peach mixture onto one half of each square.
  6. Whisk egg, and brush over edges of pastry dough.
  7. Fold dough over from corner to corner, and press with a fork to seal.
  8. Repeat with the second sheet of puff pastry.
  9. Brush tops of turnovers with remaining eggs.
  10. Place on a cookie sheet, and bake in preheated oven for about 20 minutes until golden brown.
  11. When turnovers are finished baking, whisk powdered sugar, melted butter, and milk together and drizzle over turnovers. Let cool for at least 15 minutes before serving.

Notes

  • Store: Keep turnovers in an airtight container at room temperature for up to two days.
  • Freeze: Freeze baked turnovers on a baking sheet, then transfer to a freezer bag. Store for up to two months.
  • Reheat: Reheat in a preheated oven at 350°F for 10-15 minutes until warmed through.
  • Make Ahead: Assemble turnovers and refrigerate them unbaked for up to 24 hours. Bake when ready to serve.
