Easy Pecan Pancakes

These pecan pancakes are easy to make when you want to enjoy a delicious stack that tastes like fall.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 tablespoon brown sugar
  • ⅓ cup pecans chopped
  • 1 ¼ cups milk
  • 1 egg
  • 3 tablespoons butter melted

Instructions

Make the pancake batter:

  1. In a large bowl, sift together the flour, baking powder, salt, cinnamon, sugar, and chopped pecans.
  2.  Make a well in the middle and pour in the milk, egg, and butter. Mix with a whisk or fork until smooth.
Cook the pancakes:
  1. Heat a non-stick griddle or large pan over medium-high heat. Once hot, grease, spray, or melt butter on the hot surface. When using an electric griddle, heat it somewhere between 300 and 350F.
  2. Immediately, pour ¼ cup of pancake batter onto the greased pan. Cook the pancakes for about 2 minutes, until the edges begin to look defined and bubbles form. Flip the pancakes over and cook for another minute on the other side. Remove from the pan onto a plate and cook the remaining pancakes.
Serve:
  1. Serve the pancakes warm topped with your favorite toppings and a drizzle of maple syrup.

Notes

  • To take them over the top, you could toast the chopped pecan pieces in a pan on medium heat until they are golden brown before adding them to the batter or as a topping; an extra step that's not required in the recipe.
