Easy Pickled Onions

These pickled onions are quick and easy to prepare. They're ready to serve in 30 minutes and are the perfect condiment to just about any meal!

Ingredients

  • 1 cup water
  • 1/2 cup apple cider vinegar
  • 1 tablespoon granulated sugar
  • 1 1/2 teaspoons kosher salt
  • 5 whole coriander seeds (optional)
  • 3 whole black peppercorns (optional)
  • 1 medium red onion, thinly sliced

Instructions

  1. In a medium pot, add water, apple cider vinegar, sugar, salt, coriander seeds and peppercorns. Place over medium-high heat and bring to a simmer, stirring occasionally to make sure the sugar and salt fully dissolve. Remove from heat.
  2. Place onions in a large 16 to 24 ounce glass jar or container. (I used this wide mouth Ball glass mason jar and it fit perfectly.)
  3. Carefully pour the hot vinegar mixture over onions and let sit for 30 minutes at room temperature. Serve immediately or cover and refrigerate for up to 2 weeks.
