Ingredients

  • 1 pineapple or a 14-oz can
  • 1 red bell pepper
  • 1 small red onion
  • 1 Jalapeño
  • 2 tomatoes
  • 1 clove garlic minced
  • ¼ tsp salt
  • ¼ tsp cumin

Instructions

  1. Grill (optional): For a smoky flavor, you can grill the pineapple (cut into rings), red bell pepper (halved and seeded), red onion (halved), and jalapeno (halved and seeded). Cook on a well-oiled grill over medium/high heat just until things begin to char and soften, then remove from heat.
  2. Assemble: For chunky salsa, roughly chop everything and toss with seasoning. For less chunky salsa, throw everything in a food processor and blitz a few times until it reaches a consistency to your liking.
  3. Serve: Cover and refrigerate until chilled, about 1 hour.

Notes

  • Store in an airtight container in the fridge for up to 5 days.
