Ingredients

  • 4 eggs *beaten
  • 16 oz pumpkin *not pumpkin pie filling, I use Libby's canned
  • 1 1/2 cups sugar
  • 1 cup cooking oil
  • 2 cups flour *all purpose
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 1 can Cream Cheese frosting *or homemade

Instructions

  1. Combine eggs, pumpkin, sugar and oil in a bowl and mix well.
  2. Add in dry ingredients and mix until combined.
  3. Spread batter onto an ungreased 15x10x1 inch baking pan.
  4. Bake at 350 degrees for about 25-30 minutes.
  5. Remove from oven and allow to cool completely. Once cool, spread cream cheese frosting on top and enjoy!
