Easy Pumpkin Chocolate Chip Cookies

This is an easy pumpkin chocolate chip cookies recipe that makes the perfect old fashioned fall treat and they are super simple and quick to prepare.

Ingredients

  • 4 cups all purpose flour
  • 1 cup shortening
  • 2 large eggs
  • 2 cups granulated sugar
  • 2 cups pumpkin
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 12 ounces chocolate chips
  • 1/2 cup peanuts chopped optional

Instructions

  1. Preheat the oven to 350 degrees F, and line two baking cookie trays with parchment paper.
  2. Combine the eggs, sugar, pumpkin puree, and shortening and mix until creamy.
  3. Add the dry ingredients into a bowl and mix them together, then add the dry mixture to the creamy mixture and stir together. Add the chocolate chips and peanuts (optional), and mix together to combine.
  4. Using a tablespoon, drop dollops of cookie dough onto a baking sheet separating them apart about 3 inches.
  5. Place the cookie tray into the oven and bake for 10 to 12 minutes.
  6. Remove from the oven and allow the cookies to cool for 2 minutes then transfer them onto a cookie wire rack and allow to completely cool.
