Easy Reuben Casserole Recipe

All the classic ingredients for a Reuben sandwich, except this Reuben casserole is made for a crowd. Enjoy as a main dish or omit the bread crumbs and serve as a dip!

Ingredients

  • ½ cup mayonnaise
  • ½ cup Thousand Island dressing
  • 1 teaspoon caraway seeds optional
  • 16 ounces Sauerkraut drained and squeezed dry
  • 12 ounces deli-style sliced corned beef shredded or chopped fine
  • 1 16 ounce Swiss cheese, shredded
  • 3 cups dark rye bread crumbs about 3 slices
  • 1/4 cup butter melted
  • Parsley for Garnish

Instructions

  1. Preheat oven to 350°F degrees. Lightly grease a 9" x 13" casserole dish with non-stick cooking spray. Set aside.
  2. Shred Swiss cheese. Place bread in a blender or food process and pulse until crumbs form. Drain sauerkraut and set aside.
  3. In a small mixing bowl mix together mayonnaise, Thousand Island dressing, and caraway seeds (optional).
  4. Add well drained sauerkraut to dressing mix with a fork until well coated.
  5. Place 3/4 of the sauerkraut mix into the prepared casserole dish spreading evenly.
  6. Add diced corned beef or pastrami over the sauerkraut.
  7. Top mix with shredded Swiss cheese.
  8. In a small bowl add the butter to the bred crumbs and gently mix with a fork until well incorporated.
  9. Sprinkle bread crumbs over the Reuben casserole and bake for 20-25 minutes or until cheese is melted and bubbly.
  10. Remove from oven, cool and add chopped parsley if desired.

Notes

  • For easier serving, you may want to cut the sauerkraut into smaller bite size pieces.
  • Drain sauerkraut in a colander, then squeeze between paper towels removing as much moisture as possible.
